Date: 2007-07-25 09:00 pm (UTC)- Whisk together 2 egg yolks, 5T sugar, and 3/4C whole milk together on low heat until "thickened."
- Meanwhile, whip up some heavy cream.
- Cool the pan with the egg-cream mix over ice and mix in the tea/wasabi, followed by the heavy cream.
- Cut up "some" crystallized ginger and treat as a mix-in. This worked well for LN2, as putting the ginger in too soon meant that it sort of dissolved into the freezing mix.
Overall, people seemed to feel that the mix either wasn't "sweet enough" or "spicy enough." I'm of the opinion that a spicier version would be better. So you may want to increase the wasabi powder. *shrug*

Date: 2007-07-25 09:40 pm (UTC)The thing that impressed me was the way everything combined at the end of a spoonful to give a particular sense memory, so I'll probably err on the side of caution in terms of wasabi the first time. Too much might build up to a burn too fast and I was really grooving on the balance of flavors.
