http://www.baitcon.org/flavors.html has been updated with the flavor list from this year, as transcribed by Phil(Rhino).

I've added the authors I know of, but please let me know about any I've missed (most of them, at this point).

Yay!

Someone did a cherry Ice cream? I made a Cherry Sorbet. But I don't recall a cherry IC.

My flavors were:
Cranberry Sorbet
Cherry sorbet
Mandarin Ginger Sorbet
Pineapple Ginger Sorbet
Tomato Sorbet
Honey Vanilla IC
Chocolate Hazelnut Nutella Swirl IC
Toasted Almond Chocolate Chocoalte Chip IC.

The Watermelon Sorbet was not mine.

[livejournal.com profile] zubatac and I made the Pomegranate Honey.

Clearly we need to shoot for a larger variety of flavors next year. ;-)

Oops, maybe it wasn't me, I just noticed a chocolate almond. Hm.. I did the toasted almond one with the chocolate chips. It had the same base as the Nutella swirl one.

I didn't realize there was a second chocolate almond. I made the toasted almond chocolate batch. I don't know who did the chocolate almond.

- Mix 1T matcha powder and 1.5t wasabi powder (Penzeys) in 3 T hot water.
- Whisk together 2 egg yolks, 5T sugar, and 3/4C whole milk together on low heat until "thickened."
- Meanwhile, whip up some heavy cream.
- Cool the pan with the egg-cream mix over ice and mix in the tea/wasabi, followed by the heavy cream.
- Cut up "some" crystallized ginger and treat as a mix-in. This worked well for LN2, as putting the ginger in too soon meant that it sort of dissolved into the freezing mix.

Overall, people seemed to feel that the mix either wasn't "sweet enough" or "spicy enough." I'm of the opinion that a spicier version would be better. So you may want to increase the wasabi powder. *shrug*

Thank you! You had my vote for best flavor at a walk. :)

The thing that impressed me was the way everything combined at the end of a spoonful to give a particular sense memory, so I'll probably err on the side of caution in terms of wasabi the first time. Too much might build up to a burn too fast and I was really grooving on the balance of flavors.

I thought it was perfect and nicely sweet. At least one person shied away from it, thinking int would contain fish, but I thought the metaness was wonderful.

Yup. According to the label on the container, the cherry IC was by Marc.
