Passover: Day -1.5

10 lbs apples - peeled/cored, 3 lbs walnuts, 750ml wine, cinnamon, cassia, nutmeg.
(Not gala's next year. Too mealy)

2 more (much smaller) chickens, 16c water (more or less in line with the Cooks Illus. quantities) on the stove. Batch 2 is tasting better with more dill, some salt, and reduction. Haven't touched Batch 1 yet, other than to add salt. Will mix them together tomorrow.

Many oranges juiced, an angel food cake baked, mushrooms and artichokes cooked. (none of these by me)

Sleep for a few hours, then turn off the soup.

3 batches of soup combined...and suddenly it's good.

The 3rd batch had a 5 hour simmer...must do that again.

A quintuple batch of matzah balls - 20 eggs, 10T chicken fat, 2.5c soup, 5c matzah meal, ginger, parsley, salt, pepper - mixed and chilling.

The sauteed veg for the dinner cassarole are done, as is another angel food cake, and all the other veg for the cassarole are peeled/chopped. (Not me)

Eggs are boiling.

I'll rebalance the haroset later.

There are certainly things that I didn't do that I'm not remembering right now.
