All with more veg added than I usually do. This seems to be a good thing.
Having the 60Q pot to work in to start was a good thing.

5x Matzah ball recipe made.

10#apples/2#walnuts/cassia/cinnamon/found the nutmeg/concord grape all chopped. More wine will be needed. Probably more spices, too.
I don't know why I used Red Del and Braeburn some years ago, but this year I fear it was a bad idea... the RD's were tiny and the peel was inedible. The Brae's were ... not _soft_, and I don't think 'mealy' is the right word... they keep their shape but almost crumble if you look at them funny.
Laurie suggest empires.
Other suggestions also welcome - I want some sweet, and some semi-tart, all with a good firm texture that will hold up to chopping and walnuts and such.

It's hard to find *any* good apples at this season. Empires are great, but not after they've been in storage all winter. (That's why I like to make a batch of haroset in September.) I used Gala, I think, when I helped my mom make some this weekend, and that turned out well.

If you can, find a good orchard near you - I'm lucky in that there are several, and their apple stocks are still remarkably fresh (for late March).

Gala is a good (not too) sweet apple that seems to have a good texture. Empires are like an upscale Mac, in my world. Better flavor, a little sweeter. Almost went with those. I've also used Fiji's. I'm cooking for kids, so we don't need much semi-tart in our world yet. ;)

I support the empire and macoun suggestions. Honey Crisps are like the nouveau riche of apples to me, I don't trust them yet. (Bear in mind that my family are apple farmers back about 400 years on my mom's side...)

Anyway, I found some good Empires at Russo's the other week. They maybe storage (and how could they *not* be at this time of year!) but they were *well* stored and that makes all the difference.

Whatever my dinner is tonight, it's looking awfully sad!

Nobody's mentioned Cortland apples for the sweet side. If you can find them, of course...
